Sometimes I forget how nice the coffee from my chemex is.

Chemex, for the uninitiated, is what happens when you add chemistry geekery and coffee geekery together. Chemex is a non porous glass flask and uses bonded filter paper (I’m pretty sure it’s the same type as they use in paper chromatography) to filter the coffee. The net result being a perfect cup that has all of the lovely oils and flavours, and none of the compounds that give you that bitter coffee taste.
I’ve yet to find a coffee that doesn’t taste absolutely fabulous and reveals all the nuances of flavour contained within an average cup.
I’m sitting here and savouring every last mouthful, somehow I don’t think I’ll be ignoring my chemex so much in the future.
